Swedish Bun Recipe

Developed in our very own innovation centre by our development chef Lawrence, this is a J.O. Sims adaptation of the classic Swedish bun, that originally dates back to the 17th century!
To create this indulgent, moist and sticky bun, Chef Lawrence swapped the butter and brown sugar filling for naturally sweet, spiced date paste. He added candied orange & lemon for a citrus zing, and finished with spiced date glaze.

780g Strong White Flour (plus a little for dusting)

5g Sea Salt

15g Dried Yeast

90g Caster Sugar

500ml Semi Skimmed Milk, warmed to approx. 30°C

150g Unsalted Butter, at room temperature cut into small cubes

500g J.O. Sims Spiced Citrus Date Paste

100g J.O. Sims Spiced Date Glaze, warmed
