Discover the Potential Behind our New Date & Raisin Pastes

Developed in our very own innovation centre by our development chef Lawrence, this is a J.O. Sims adaptation of the classic Swedish bun, that originally dates back to the 17th century!

To create this indulgent, moist and sticky bun, Chef Lawrence swapped the butter and brown sugar filling for naturally sweet, spiced date paste. He added candied orange & lemon for a citrus zing, and finished with spiced date glaze.

Prep Time = 1 hour and 30 minutes

Ingredients

  1. Prepare the dough

    Using a food mixer with a dough hook, add the flour, salt, yeast and sugar and briefly mix. Continue to mix, adding the warmed milk and cubed butter. Mix for approx. 5mins, until fully blended. When mixed, keep in a covered bowl at room temperature for approx. 1 hour until it has doubled in size.

  2. Fill & prepare the buns for proving

    With a little flour, roll the dough into a rectangle shape to 20mm in height. Using a pallet knife, spread the spiced date paste across the whole surface of the dough.

    Fold in half and cut into strips 20mm wide, a pizza cutter is perfect for this. Twist and knot each strip, placing onto a baking sheet. Allow to prove once more, until they have increased in size by a third.

  3. Bake & decorate the buns

    In a pre-heated oven, bake for 12-15mins at 180°C until golden brown. Allow to cool for 10mins then apply the warmed glaze across the top of each bun with a pastry brush.
